Healthy Version of Chicken Noodle Soup(LOL)

1 whole chicken
1 onion
1 celery stick
1 carrot
1 hand full of parsley

Boil for 1 hour. Remove chicken and debone. Remove the onion, celery, and carrot. Return chicken into the pot and add:

1 celery stick, chopped
1 onion, chopped
2 carrots, chopped
2 cups frozen mixed veggies
2 small potatoes, diced
2 tsp garlic, minced

Add seasonings. 2 tsp salt and 1/4 tsp pepper, to taste.

Boil until veggies are soft. Add noodles or dumplings. Cook additional 10-20 min.

LLL Baking Mix

8 cups whole wheat flour
5 T baking powder
1 T salt
1-2 cup dry milk powder
1 1/2 cup oil

combine and use just like Bisquick. Add 2 cups mix to 2/3 cup milk and drop into boiling stew. Cook 10 min uncovered and 10 min covered, on low. Enjoy!

OH good - I was wondering...if you make this mix up do you have to store it in the fridge? You just use oil instead of shortening....wonder if that would work with those "cake mixes" too.....

I didn't. I put it in the pantry. I used olive oil. Of course, if you're going to make a huge amount then you may want to store some of it in the freezer or something. I just made this amount and it kept for a month or so. HTH!

Oh LLL Baking mix, cool!

I have a very old LLL cookbook from when I was a leader. There are recipes I still use regularly.

I hope you enjoyed your soup and are all feeling stronger!

My soup was just what I needed. I love chicken soup when I'm feeling poorly and we've had it twice through this illness.
