My Menu for this week...


Breakfast

Eggs, Bacon, and Fruit

Ham, greenbeans, and potatoes
Hash, salad
Black beans and rice, bread, and salad
Nachos
Fried chicken, mashed potatoes, salad
Tuna Noodle Casserole


I'm trying a new breakfast item from the show Everyday Italian. It's called Chicken and Orzo Frittata. I think it'll be good.


Chicken and Orzo Frittata

3/4 cup orzo pasta
6 eggs
1/3 cup whole milk ricotta (I'm using cottage cheese)
1/4 cup creme fraiche (I'm using sour cream)
2 cooked chicken breasts, cubed (about 2 cups)
4 scallions, chopped (I'm skipping these)
1/4 cup chopped Italian flat-leaf parsley
1/3 cup diced roasted red bell peppers (I'm skipping these also.)
1 teaspoon salt
1/4 teaspoon freshly ground black pepper

Preheat the oven to 375 degrees F.

Bring a small pot of salted water to a boil over high heat. Add the orzo and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta.
In a large bowl combine the eggs, ricotta, and creme fraiche and stir until the eggs are beaten and the ingredients are combined. Add the cooked orzo, chicken, scallions, parsley, red bell peppers, salt, and pepper. Stir to combine.
Pour the mixture into a 1 1/2-quart baking dish. Bake for 25 minutes. Turn on the broiler. Place the pan under the broiler until golden on top, about 5 minutes. Remove from the oven and let set for 5 minutes. Cut into wedges and serve with a side salad.


Yesterday, Allison read her paper to the congregation during service. It went well and she got quite the introduction from the pastor. We found out that most kids have to rewrite their paper a few times before it's accepted but Allison's didn't even have one red mark on it. He was most impressed and told everyone it was the best paper he's ever read, so everyone was especially quiet in order to hear this wonderful paper and Allison was mortified.LOL She was so quiet that I'm sure most everyone didn't hear her at all.

I'm on my new computer! Now we just need to finish getting Jon's room ready for the old one. Everything that I try to do takes at least twice as long as what I expect it to. I ended up with a horrible tummy bug last night so I have no idea what this week is going to be like. I'm praying that I start to feel better today and I hope that no one else gets this. Right now, I feel yucky and I'm trying hard to keep up with everyone.

De'Etta was saying on her blog that once you've had 3 kids, any others aren't so hard to handle and I kept wondering about that because ever since we added Sophia I've been having a really hard time keeping up with everyone and I've been feeling overwhelmed and out numbered. Well, I've realized that this is actually the first time I've ever had three little ones at one time. I just feel like EVERYONE NEEDS ME and I can't do it all. Evie's been acting out, Isaac's been having temper tantrums all the time, Sophia has horrible gassy colic.ugh. I know that things will get better, I'm just trying to figure how to make things a bit better now. I want to quit REACTING and start being PROACTIVE. Those of you who have had three in a row, what did or have you done to be more proactive in your parenting? How can I manage the three without a major disaster each and everyday?lolol

Well, the baby's done eating so my typing with one hand has come to an end.lol

I need to go back and EDIT that post....you are right...it should read "three little ones at one time"....because that does make a difference. You are simply in the transition phase...you are going to get those legs under you soon, find routines that work for your family and then you'll soar. You will

Sorry. I'm no help at all. All of my kids are at LEAST 3 years and 9 months apart...or more....

Congratulations to Allison on the paper. I'll have to read back further in the blog to see what it was on or what that's all about, but wanted to say congratulations even though I have no idea what the paper was for (LOL).
