Recipe...

Fried Rice from Miserly Meals...

2tbsp oil
3/4 cup diced onion (I used very little, maybe 1/8 of a cup very thinly sliced)
2 cloves garlic, pressed (I used minced)
4 egg whites (I used 2 eggs)
2 1/2 cups cooked rice
1 cup frozen peas and carrots
1/2tsp ground ginger ( I used fresh)
2 Tbsp Soy Sauce

(I also added 2 cups leftover BBQ Chicken, diced, that had sauce on it.)

On medium heat, cook up the onion and garlic in the oil. Add peas and carrots, ginger, chicken, and soy sauce. Cook egg separately and set aside. Add in your rice to the meat and veggies, adjust seasonings. (I added more soy sauce) Add egg and serve.

This was sooooo good! I think the added BBQ sauce really added an authentic taste to this dish. I think I've found the secret to good fried rice....American BBQ sauce!LOL

LOL. No, I can safely say that I ate more than that. That was Evie's plate and Isaac had the pink one tonight. They fight constantly for the blue one. I'm sure that *I'm* the only one with that problem.LOL

Lisa, this looks yummy! We have tried lots of different fried rice recipes, this one looks great! I'm going to give it a try.

Love the little plate. Gabe does not like his food touching, but it is hard to find a more "manly" almost 8yo boy type sectional plate!

Thanks for the fried rice recipe! We LOVE fried rice, but I've never found a good recipe for one. Do you happen to have a good recipe for Mexican rice? I haven't found one of those that I like either. I LOVE your black beans and rice recipe so I bet I'll like the fried rice one. We seem to have similar taste buds.

It is sooo good. It's has made it to our master favorite's list.

I don't have a good Mexican rice recipe yet but I'm tinkering with an ok one. I'll post it once it's just right.

We do seem to have the same tastes, pretty neat!
