My Menu for this week...


Heavenly Chicken w/fruit and salad
Potato Bar w/salad
Tuna Noodle Cassarole w/salad
Black Beans and Rice
Grilled Chicken w/rice and steamed veggies
Roast w/potatoes, carrots, and onions
Salsbury Steak w/mashed potatoes and asparagus

Today I'm not feeling that great so I stayed home from church while Eric took all the kids. I'm grateful for the quiet and I'm hoping I'll feel better soon. I have a lot of food sensitivities and I'm afraid that I ate something that was a no-no without realizing it.

Here's the recipe...

Heavenly Chicken

Layer boneless chicken in a baking dish. Sprinkle with a 1/2 and 1/2 mixture of crushed saltines and parmesian cheese. Dethaw and squeeze dry some frozen spinach, spread over chicken. Cut some ham up, I use deli ham. Layer over chicken and spinach. Make a double recipe of cream sauce. About 3tbsp butter, 3tbsp flour and 3 cups milk. Once thick pour over chicken and bake at 350 for an hour. Enjoy!
